My Favorite Butter Cookies
So what's better than a cup of tea? Well, cookies to go with the tea, of course! Here's a wonderful recipe from one of my favorite books, "If Teacups Could Talk" by Emilie Barnes.
When was the last time you had a friend over? (Probably a long time since this is written a year after pandemic started!) So invite your family that you live with, or have a socially distanced get together with a dear friend, and serve these cookies with a pot of your favorite tea!
2 sticks unsalted sweet butter (softened)
1 cup sugar
1 egg, separated
1 1/2 tablespoons Amaretto or
1/2 teaspoon almond extract
2 teaspoons grated orange zet
1/4 teaspoon salt
2 cups of flour
3/4 cups sliced almonds
Preheat oven to 350 degrees. Beat together butter and sugar until light and fluffy (about 3 minutes). Add egg yolk, amaretto or extract, orange zest, and salt; beat well. Stir in flour and blend well. Spread and pat the dough evenly into a 10 x 15 inch jellyroll pan. Beat egg whites until foamy and brush evenly over the dough. Sprinkle almonds over top. Bake 40 minutes or until light golden brown. Cut into 2-inch squares while still warm.
